What to do with left-over vegetables?

Still have left-over veggies: Use them up while warming you up.

Easy Turkey Stew

This stew is a hearty balance of healthy and delicious.  It is one of those recipes you can turn to in a hurry.

 3 cups left over veggies – from your feast – you can add your left-over stuffing too – if you need more to bring the measurement up to 3 cups – frozen corn or green beans work perfect

2 teaspoons olive oil

Zest and juice of 1 lemon

1-pound left-over turkey – bones removed, cut in to 1-inch cubes

1 cup white wine

2 cups left over gravy and/or chicken broth

1 ½ teaspoon dried Italian style seasoning

1 can (14.5 oz) no salt added, diced tomatoes

Salt and pepper to taste 

In 3-quart saucepan, heat oil over medium-high heat. Add  all your ingredients and toss to warm through. Add tomatoes (with juice), gravy and/or chicken broth, wine, lemon juice, Italian herb seasoning, salt and pepper. Heat to boiling. Reduce heat; cover and simmer 10 minutes. Uncover and simmer 10 minutes longer or until sauce thickens.

Variation:

Vegetarian: Leave out turkey, gravy and/or chicken broth – use vegetable broth
