Holiday Almost Here!!

We are excited here as a family.  Joshua our son is coming home on leave.  This will be the last chance home before he is deploded to the water off the Persian Gulf.  He is USCG.

I want to cook all his favorite meals crammed into 2 days – hey.

Grand Daughter Caitlin has her b-day on Friday and turns the big 10!

Feasts and foods fun and love.

Here are some foods:

Baked Ziti

1 pound Ziti pasta cooked according to package directions and set a side

1 lrg jar favorite tomato sauce

1 pound mozzella cheese grated

1 cup grated parmeasan cheese

1 pound container rocotta cheese

2 eggs beated

1 pound sweet italian sausage sauted,  browned, and cooled

Mix all ingredients together and spread into 13×9 pans. Top with mozzells and parmeasan cheese.  Bake in 350 oven for 20 – 30 minutes untill golden and bubbly.

Salad Buffet:

These are items we put on our salad buffet then everyone can choice what they want.  I use disposable Chinet plates and put them in the compost pile.

Baby spinach, baby romain, mixed greens, sliced iceberg

Shreeded carrots, sliced sweet bell pepper, cucumber slices, grape tomatoes, shredded red cabbage

canned pineapple chuncks, sliced peaches, sliced pears

croutons, shredded cheeses, seedless grapes, sunflower seeds raisins, and a chunk cheese platter

Dressings:  Russian , French,  Blue cheese, Ranch,  Basic vinegarette.

Caitlin’s Birthday meal is Baked Chicken with all the Thanksgiving trimmings.
