Hot Chicken with Melted Cheese and Pasta – can not go wrong

On a cold wintery windy day can’t go wrong with chicken supper that calls for chicken breast, melted mozz cheese and pasta.

Mozzarella Chicken Breasts
5 boneless chicken breasts
1 can cream of chicken soup mixed with 1/3 cup water
2 cups stuffing
1/2 cup (1 stick) butter, melted
5 slices mozzarella cheese

Place breasts on the bottom of a baking pan. Place a cheese slice on
each breast. Cover with the soup mixture and sprinkle buttered packaged stuffing (like stove top) over all. Bake for 1 1/2 hours at 325 degrees F
Alllow to rest 5 – 10 min before serving.
Serve over or aside favorite cooked pasta

You can serve with Alfredo sauce or tomato sauce

Alfredo Sauce
2 tablespoons margarine or butter
1 small onion, thinly sliced
4 cups whipping (heavy) cream
2 tablespoons freshly grated Parmesan cheese
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1/2 teaspoon pepper
Heat margarine in 10-inch skillet over medium-high heat. SautT onion in margarine until tender. Stir in whipping cream; heat to boiling. Stir in remaining ingredients; reduce heat. Simmer uncovered 30 minutes, stirring frequently
