Broiled Flank Steak with soy-honey marinade
2 Flank steaks (about 3 1/2 pounds total)
Marinade – 1/2 cup soy sauce, 1/2 cup rise vinegar, 1/3 cup honey, 2 teaspoons pepper, 3 Tablespoons minced ginger
Place marinade in zip-lock bag – place meat in bag and set aside and marinade for 1 hour.
Pre heat broiler to full heat for 15 minutes
Place rack 2-3 inches from broiler – broil the steaks 6 minutes and turn and cook 6 more minutes – steaks should be 125 degrees F
Steak should rest at least 5 minutes before slicing across the grain.
Grilled Baby Potatoes
3 1/3 pounds baby yukon gold potatoes
3 Tablespoons olive oil
Scant 1/4 teaspoon salt
Dusting black pepper
Grill heated to HOT’
Toss potatoes,salt, and pepper – place on hot grill cover and cook for 10 minutes
Turn cover and cook 10 minues until fork tender
Ice Cream with Raspberry Sauce and Sliced Peaches
1 cup (1/2 pint) fresh raspberries
2 Tablespoons sugar
2 rice peaches peeled
1 pint high quality vanilla ice cream
Place paspberries and sugar in blender to puree. Sieve mixture to remove seeds.
Cut peaches into bite sized pieces.
Place 2 scoops ice cream into 4 dessert bowls. Place peaches on ice cream – pour raspberry sauce over ice cream and peaches.
